Kofte Kebab Ingredients/Items you’ll need:

  • A large mixing bowl
  • 1kg of minced lamb
  • 2.5 tbsp of salt
  • 1.5 tbsp of ground black pepper
  • 1 tbsp of white pepper
  • 2 tbsp of lime juice
  • 2.5 tbsp of cayenne pepper
  • 2.5 tbsp of coriander seed powder
  • 3 tbsp of tomato paste/red pasta sauce
  • 1 small onion (diced)
  • 3 cloves of garlic (diced)
  • 2 egg whites
  • Bread Crumbs

Directions:

  1. Dice the onion and garlic together and mix it in with the minced lamb
  2. Mix the rest of the ingredients in excluding the binding ingredients (egg whites&bread crumbs)
  3. Lastly, add in your binding ingredients till it is fully incorporated. If it’s not properly binded, add more bread crumbs
  4. Mould your kebabs in the shape you prefer and store it in the fridge for appoximately 30mins
  5. You can now grill/fry/barbeque it

Couscous Ingredients/Items you’ll need:

  • A large rice bowl
  • Aluminium Foil
  • 1 cup of couscous (serves 4-5 people)
  • 2 cups boiling water
  • A pinch of salt (seasoning the couscous)
  • 6 button mushrooms (sliced)
  • 8 prawns
  • 1 tbsp Salted butter
  • 1 tbsp of lime juice
  • 1 tsp cayenne pepper
  • 1 tsp white pepper

Directions:

  1. Pour 2 cups of boiling water to 1 cup of couscous into a large rice bowl
  2. Add a pinch of salt
  3. Cover the rice bowl with aluminum foil (7-8 mins)
  4. While waiting for the couscous to fluff up, prepare the rest of the ingredients
  5. Turn on the stove to low-medium heat, add in the salted butter+ prawns
  6. Saute for about 5 mins till the prawns are cooked (turns orange on both sides)
  7. Add in the mushrooms+lime juice+cayenne pepper+white pepper and saute everything for another 3 mins
  8. Turn off the stove and pour in your sauteed ingredients into the couscous and mix everything together

Salsa ingredients:

  • A bowl
  • 2 red chillies
  • 2 green chillies
  • 1 onion
  • A handful of cherry tomatoes
  • 1 tbsp worcestershire sauce
  • 1 tbsp lime juice
  • A pinch of salt
  • 1 tsp coriander root powder

Directions:

  1. Deseed the red and green chillies and dice them up together with the onion
  2. Deseed the tomatoes and dice them
  3. Add in the rest of the ingredients listed above and mix well
